just wondering what the general consensus is when it comes to replacing drum brakes with disk brakes, and whether or not it's worth the 500 or so bucks for the kits.

I replaced mine with disc brakes and they've been great so far. I can tell a big difference. The only problem I've had is the fenders rub on the front tires when I brake medium to fast. But I also have fatter tires on the front and they stick out a little. I figure that's the only way I'm going to burn rubber in it anyway... LOL I would invest the extra in disc for performance and just so you can say it's different.
