I just bought an '08 Passat Komfort edition. So far so good.

I just had the speakers replaced and after I drove off, I noticed an airbag light was on. I also now notice that when starting the car, just before the airbag light comes on, I get a message in the computer area stating "Airbag Fault".

Does this sound like the stereo guys knocked something loose? Does it sound serious or is it as simple as resetting an error code?

I had one, it comes on if something in your airbag circuit is wrong.  Like mine could either be the igniters are bad or some wiring shorted, but in your case as new as it is I'd go and use the warranty.  Should have got one, but if not, I would still run codes and see if it can be reset.

In case it helps anyone else, the dealer simply had to reset the light. It cost me $42 and I plan on passing that along to the stereo vendor.
